I was preparing for lunch and I took the vegetables, fish and eggs out of the fridge. I noticed that the potatoes in our fridge are starting to grow eyes. I left the potatoes untouched for a few weeks no wonder eyes start popping out of the potatoes.
I took one of the potatoes and showed Dot. She gave the potato a puzzled look and I asked her, “Mei, what is this?” She said with a tinge of uncertainty, “Potato” and stretched out her hand wanting to touch the sprouting eye.
Daddy said why not we plant the potato and see how it will grow. He dugged a hole in one of our pots and placed the cut potato half covered with the soil while Dot stood beside watching the whole planting process.
After 3 weeks, the shoot has started to grow leaves.
Read that it takes about 2 to 4 month to harvest potatoes after planting. Let’s see how our potato plant will grow 2-4 months down the road! I will update this post every few weeks on the development of our potato plant.
